Café Shin's founding location, opened in 2024 by Eun Jung Shin, a pastry chef from Seoul. A hanok-inspired house sits in the middle of the room, with walls and roof made of handmade washi paper. It is the only one of the three locations to serve kimbap, from Tuesday to Friday between 12:00 PM and 2:30 PM. House signatures: purple sweet potato goguma latte, black sesame heukimja latte.
